The other great thing about this pie is you can make it ahead of time as it is stored in the freezer.

If only they had a sweet and salty category this would be it with the sweet peanut butter filling and salty cracker crust, it truly is a perfect combination that will transport you back to your childhood.

If it turned out is good as I imagined and hoped it would I also wanted to enter it in the So Delicious and Go Dairy Free Snackable Recipe contest so I was using So Delicious Culinary Milk like I did I my PB&J Peanut Butter Mousse Pie but also used So Delicious Coco Whip to keep it fluffy and lighter. I didn’t want it to be quite as rich as my PB&J Strawberry Peanut Butter Mousse Pie and I wanted it fluffier. The filling is definitely peanut butter but I didn’t want to make it too rich either so I found a balance and swirled in a little extra peanut butter on top so it not only looked good but the peanut butter swirls would give those hints of rich peanut butter flavor.
A couple tweaks and it was perfect, a salty saltine cracker crust with a sweet peanut butter filling! There has been a lot going on since we have been home and it has been a very emotional time but I had to try to unwind and needed time to myself to reflect and reading wasn’t going to work so late one night I went to my happy place, my kitchen.
Don’t worry it wasn’t while we were out having fun but while sitting in the car or laying in bed trying to sleep. I’m not going to lie while I really enjoyed our vacation the thought of getting home and getting in the kitchen to make this pie ran threw my mind a few times. While I thought about them and the gears kept turning I got this idea, I would make a peanut butter pie with a saltine crust! Yes a sophisticated way to enjoy that simple combination I enjoyed as a child. I can’t even remember the last time I had that but instantly I wanted to make them. It reminded me of smearing peanut butter between saltine crackers as a kid, oh those yummy peanut butter cracker sandwiches. With that I was sitting there having a conversation and saw a photo on the wall, I can’t remember exactly what was on the picture but I bet it was crackers, and I was transported back to my childhood. It was so cute and I felt like a kid but a sophisticated kid with really good taste. The sandwiches come out on blue or yellow plates with a little bag of chips and carrot sticks. The sandwiches were a little larger than your standard sandwich you would make at home but the bread was soft and slightly thinner than bread we buy at home. There were maybe 6 tables, the staff was friendly, the menu was up on a board behind the counter, and there were some peanut butter photos up on the wall. The cutest little sandwich shop in a neighborhood setting in SoHo. Although I think only A has a love for it as much I do, S is not far behind her. I am a huge Peanut Butter & Co lover, if you are a regular reader or know me you already know this, and my family loves it too. Last week while in New York we had lunch at Peanut Butter & Co, yes I made it there and it was amazing! There really wasn’t a question of if we would make it there, no way would I be in New York and not go.
